Chicken & Gnocchi Soup

One of my favorite things at Olive Garden is their Chicken & Cnocchi Soup. It is SO good! I found a recipe online and tried it out for the first time last night. This was my first homemade soup experience ever. I was so nervous on how it was going to turn out. It was perfect! It was actually pretty simple to make, perfect for cold weather, and made a lot of leftovers. I also made a salad and had some French bread to go with it.

Chicken & Gnocchi Soup


Ingredients:

3-4 chicken breasts, cooked & diced

4 cups chicken stock

2 cups heavy cream or half-and-half

1 stalk celery, diced

1-2 garlic cloves, chopped

1/2 carrot, thinly sliced

1/2 onion, diced

1 cup fresh spinach, chopped

1 tbs olive oil

1 tsp thyme

salt & pepper

16 oz potato gnocchi

Directions:

Saute the onion, celery, garlic, and carrot over medium head until onion is translucent.

Add chicken, chicken stock, cream, salt & pepper, and thyme. Heat to boiling, then add gnocchi. Gently boil for 4 minutes. Turn down and simmer for 10 minutes.

Add spinach and cook for another 1-2 minutes until spinach is wilted.

If you would like your soup thicker, 1-2 tbs of cornstarch to water then add to soup.

Ladle into bowls & serve!
